Roasting Science & Physics
Traditional roasting relies on a hot metal drum (conductive heat) where beans continuously tumble against searing surface walls, essentially frying the skin and trapping smoke inside the drum chamber.
At White Tree, we utilize Fluid-Bed Convection Air Roasting. Our organic beans are levitated in a continuous stream of purified hot air. This pure convective heat roasts each bean evenly from the inside out without touching hot metal, instantly stripping away the bitter skin (chaff) and eliminating the carbon bitterness found in traditional roasts.
The chaff is the thin, papery skin surrounding the raw green coffee bean. In standard drum roasters, the chaff burns off inside the drum and burns alongside the beans, releasing bitter smoke and scorching residue that gets baked into the coffee.
Our air-stream instantly ejects 100% of the chaff out of the roasting chamber the moment it separates. The result is Anti-Carbon Purity: a remarkably clean, non-scorched cup that reveals true origin notes and is far gentler on your stomach.
Yes. Much of the heartburn and acid reflux associated with commercial coffee isn't caused by natural coffee oils, but by the toxic carbon dross and scorched residue produced when drum roasters burn chaff. By eliminating drum contact and removing chaff instantly, our convection process drastically reduces the harsh, irritating compounds that cause "coffee gut."

We partner with specialty importers and smallholder cooperatives through Direct Trade principles that guarantee farmers are paid well above Fair Trade minimums. We verify that our producers utilize traditional, chemical-free, or shade-grown methods that honor both the worker and the land.

Certified Organic beans come from farms that have undergone formal third-party audits confirming zero synthetic pesticides, herbicides, or chemical fertilizers were used. While many small heritage farms practice passive organic farming naturally, our Certified Organic lots carry formal documentation from origin to our roastery in Colorado.
Fair Trade sets a baseline floor price to protect commodity farmers from market crashes.
Direct Trade / Relationship Sourcing goes beyond Fair Trade floors. We source high-density, specialty-grade lots directly from estates and cooperatives, paying premiums that are often 50% to 100% higher than Fair Trade minimums. This directly rewards producers for exceptional quality and sustainable land stewardship.
Batching, Rest & Fulfillment
Coffee is not like fresh bread; it requires a scientific degassing period. Freshly roasted coffee is saturated with $CO_2$ gas. Brewing beans 1–3 days post-roast causes violent gas release during bloom, preventing water from saturating the grounds properly and leading to sour, uneven extraction.
We immediately seal our roasts in one-way valved obsidian bags where off-gassing $CO_2$ purges oxygen out through the valve. We ship our stock so it arrives at your door between Day 7 and Day 14 post-roast—the exact window of molecular peak extraction.
Because fluid-bed convection removes the chaff (which contains reactive fats that go rancid in drum roasting), our sealed bags maintain their peak "Source Code" profile for 4 to 6 weeks unopened. Once opened, store your beans in a cool, dark container (avoid the fridge or freezer) and consume within 21 days for optimal clarity.
The 75g Standard is our high-yield batch formula engineered for commercial airpots (1.5L to 2.0L) in high-frequency settings like churches, station houses, and offices. Dosing exactly 75g of dry ground coffee to 1350g of water yields a precise 1:18 "Fellowship Ratio," eliminating guesswork for volunteers and staff.
